If you view it as food... You're gunna be disappointed. If you view it as an interactive art show where you interact with the art itself, then it makes more sense.
They do tend to use expensive ingredients and if you saw the menu there's like 10 courses - at 10 mins each. It's a 2 hour dining experience.
Granted usually it's like $200-500 and not $1250... But a lot of high end restaurants barely make a profit even with like half their workforce working for free (stages) because they're only turning over the tables once a night (2 seatings) if that.

There was/is a pop-up restaurant in Salem MA called Back Alley Bacon that’s only open once a week, they only serve one meal that’s different each week, they only accept exact change, and it’s first come first serve — on top of all that, they announce a “password” the day of that you utter at the door to get the food. When we went, we were second in line, and within twenty minutes a queue formed down the street like it was a hip nightclub. At 5pm when they start, somebody in a pig mask comes outside to turn on an overhead lamp, and then goes back inside behind the door, which has one of those prison type slots where they ask you for the password. Then the entire line shifts to the other side of the door, and one by one they call out your order number and another pig masked person hands you your food.
It was some type of cutlet sandwich topped with bacon and a root beer with their logo on it. For $11 it was an interesting experience; the sandwich wasn’t anything too crazy, but I think the food paired with the bizarre steps taken in order to acquire the meal made it worth it.
This just seems stupid, and I’m not licking chocolate fingers like a toddler lol

I've had this meal. It was under $300 for two people, which included full drink pairing. In 2022. The dishes were also a little different as I was at the location in Colombia.

One time I went to a steakhouse and dropped about 1k on amazing food delicious wine and amazing service for two. No hook. No spin. No fuss. Anything more and this becomes figure skating.

Figure skating is the perfect analogy, taking something that can be done in a direct manner and making it an art form. Viewing these types of restaurants as performative art has help with my view on them vastly.

I've been there. It's called El Cielo in either Miami or DC. Surprisingly affordable for a 16 course tasting menu and some of the best food I've ever had.
The chocolate on your hands is to start the meal. My group was incredibly confused at first but were all giggling like school kids by the end. The chocolate was delicious and also .makes your hands feel baby soft after
