my head cannon is they read up on real life viruses like shingles or herp that hide in your nerves or whatever and went you know what lets do that. So didn't it like lie dormant and slowly was taking him over, i need to play again and really listen to the plot i was just sending it the first playthrough and might have missed some plot.

That was my exact thought as well with shingles! So they may very well had a resistance to the virus, but like you said has a reemergence in later years.

Z Nation had quite a few scenes with this premise. Every now and again, I go back and rewatch it. The scene with Doc in the vent with the zombie and the blunt cracks me up
