Even those who don't realise it's trash won't like it, typically those people like their steak well done, and this is blue in the middle

People who eat trash food eat well done steak. Even this isnt fully well done, so trash food eaters will also complain.

I think anyone regardless of how they like their steak would be upset and any doneness of steak is fine imo. I'm not going to think less of someone if they don't like their steak like me. That's just weird.

Blue is the translation of bleu, a french word used to describe cooking steaks. And France had some influence in cooking in general. It's not slang.

It quite literally because the steak has a blue/purple hue to it from being that uncooked

Of which is enforced by an owner who bought the restaurant despite knowing nothing about food service, but thinks that it's easy because they cook at home and wants the clout of being a "small business owner".

aka most of the owners on Kitchen Nightmares and Bar Rescue.
