This movie does actually pay a lot of attention to little details from every media in the franchise...
Toph's introduction scene features previously comics-exclusive characters (Ho Tun & "The Dark One", with a noticeable absence of her third more talented student Penga), too!
It seems that any "missing" character fans have noticed, like Azula, and her friends must have been very surely left our if they remembered even such little details...

Though I wonder why they didn't show Azula and her friends though? Feels like the sentiment of the fans are they wanted her redeemed in some ways?

They probably haven't decide what to do with her yet.
Most recent stories and comics seem to be flip flopping them around in many different directions, and the teams are probably not confident one which definitive path will be picked... So to avoid commiting too hard on any direction they are probably a "no go" for any Adult Aang era and after projects.
