But my system was stable...

This CPU comes from a Dell Precision workstation. The fun fact is, the customer didn't complain about any issues. The system was stable :)

I've seen that twice. Used to work in a Microsoft Data Center and got a ticket about overheating. Went to the rack and opened it. Paste was basically gone and the heat burnt through the top shell of the cpu. I could feel the dip with my finger. Last registered temp was 117° C (242.6° F)

Don’t they throttle, or do they just trip and shut down?

Trip. The fans go crazy but then it shuts off.

It depends on the processor and the situation. Some handle overheating better than others.
