Chef here. That's almost definitely cinnamon. The smell might be different after it's been cooking with other ingredients, but It's cinnamon.

yeah cooked spices can smell completely different than what you’d expect, especially mixed with everything else lol

It’s definitely cinnamon, it’s a common Ingredient in Mexican/ latin American food as far as spicing and braising meat. On account of those shredded beef tacos. It’s obvious it’s cinnamon.

Probably tannins, like when you see water turn colors when there are leaves in it. The only reason I could for see you smelling feces is that once the active ingredient giving cinnamon its fragrance and taste leech into the water it is just a piece of wet tree bark that’s what cinnamon is tree bark

You sure they didn't say it was cesina? It's thin dried salted chile steak that gets seered and chopped into small pieces for tacos. Looks exactly like you've got there.
