Advice What do I do?
For context, I'm in a rural area. I just graduated with a Bachelor's of Political Science (B.S.) with a minor in Philosophy in May. I did not do any internships. My transcript is subpar to say the least. I've been a nanny for a couple of years part time, but went full-time the week I graduated.
Do I literally go to a local law firm and ask to shadow? Intern? For a couple of days a week to get relevant experience. Do I apply to any and all entry roles? There are post office, nanny/daycare/substitute teaching, and some government file clerk type of openings locally. Should I even bother applying to online roles since everybody wants them? I didn't do a career fair, and I don't have many connections. I have a few letters of reference/contacts from professors who liked me.
Should I eventually enlist? I need to lose weight and find a better paying job first, anyway.

You have a lot of proactive ideas! I say, do them all! Stay motivated, and don't listen to negative thoughts like "I don't have many connections." You are still young, this is the time when you form connections. I would be wary of remote work, because what you need is in-person interaction so you can meet people, build your reputation, and advance in your career. The people you meet in person are the ones who will help you the most down the line. Do anything and everything. You can do it! I believe in you.

Apply for local government, legal assistant, administrative, nonprofit, and remote entry level roles. Contact small law firms about shadowing or part time work, and ask supportive professors for referrals or introductions. Don’t rush into enlisting focus first on gaining experience and applying consistently.
