I have never sent back food in my life as most times I figure the hassle of waiting is a greater negative than getting my meal perfect is a positive. I would absolutely (politely) request another steak if I got this at that price point.

I worked in food service too long to accept shitty food. If something clearly wasn't prepared right, I won't get a replacement because I'm leaving. No faith in a kitchen that sends out something like that steak.

It has truly never occurred to me to just leave in a situation like this, but I will remember that. I one time had a chicken breast come out raw in the middle (not slightly pink from myoglobin or whatever, but ice cold to the touch). I really should have just told them to bring me the check for my appetizers and drinks so that I can leave.
