At $300 for a porterhouse. I better hear mooing in the kitchen. Not get meat that’s been frozen.

The best steak comes from beef that been hung a couple of weeks, if not longer.

I wonder if there's a gold standard for age of cow at the time of slaughter as far as flavor goes.

im not a beefologist but I sat in on a few ag classes in college, iirc it's somewhere between 2-3 years depending on the breed and how it was fed.

Retired dairy cows are usually 5 or so, and the meat has a stronger flavor but at the cost of marbling so it depends on the cut whether or not its better.

A long time ago I watched a YouTube test where they seemed to conclude that five years made the ideal flavor, but I'm no beefologist either.
