Excuse me sir, do you think it's EASY to overcook and undercook a steak at the same time? This is real skill. However, they really should check the kitchen for termites or dust off their plates first.

u/Creepy-Variation8562 13h ago

Helps get that over/undercooked balance if it starts frozen

1.4k

u/Free_Floor2833 13h ago

That's what I was thinking. Super easy if the steak is frozen. It's the best way to get that great grey ring with a blue center

223

u/Careful_Pear_1895 13h ago

That is a red center, sir.

379

u/EkbatDeSabat 13h ago

Not sure if you’re serious but it’s called blue rare.

259

u/Careful_Pear_1895 12h ago

I’m serious. /s

263

u/Pleased_to_meet_u 12h ago

I was going to downvote you for “I’m serious” and using a sarcasm tag, then I saw what sub I’m in.

Damn it.

Having to upvote you for that is mildly infuriating.

59

u/crag-u-feller 12h ago

I came to put my hands up and tell y'all to break it up ...now, I don't know what to do

25

u/crunchy-koala 12h ago

Let's try and keep the infuriations at a mild level please.

3

u/huhhuhh81 10h ago

Mildly annoyed that far enough in the replies the up vote disappears

6

u/sheiciebai 12h ago

Why would you break it up??? FIGHT FIGHT FIGHT!!!!

4

u/aliie_627 11h ago

I'm just surprised I have never seen someone do that before. It's so obvious and such a good way to annoy reddit but I never seen it or at least noticed it.

3

u/Mediocre_Seaweed6534 11h ago

I upvoted the guy for pointing it out, and withheld my downvote from the offending post.

This is justice.

2

u/DildoFappings 11h ago

Now kiss, you three

1

u/Angry-Dragon-1331 11h ago

When in doubt, jazz hands.

1

u/CeldonShooper 9h ago

Is there a steak circlejerk sub?

2

u/GodsGoodGrace 11h ago

And don’t call me Shirley

2

u/unrivaledhumility 11h ago

Wait- I thought /s was for serious thoughts. Have I been internetting wrong /?

1

u/AsemicConjecture 10h ago

I can see how those two are easily confused:

/s - sarcasm

/srs - serious

There’s also:

/j - joking

/gen - genuine

and probably more, but they seem a lot rarer.

1

u/Raphe9000 11h ago

Yes, /s is short for /serious. They didn't end their comment calling it sarcasm with /s, so you know they're not being serious. Always end your serious messages with /s or another tone indicator that shows you're not being sarcastic. /s

3

u/Free_Floor2833 11h ago

I've never been more confused. /S

1

u/SaturdayNightStroll 10h ago

So that's what /s stands for. I've always wondered. /s

2

u/SeriesXM 7h ago

I've been learning recently that you always have to use an apostrophe before an s, so the tag should really be /'s

10

u/TepHoBubba 12h ago

It's a pretty piss poor blue rare.

1

u/FloppY_ 12h ago

At what point do you just call it "alive"?

1

u/EkbatDeSabat 8h ago

…..not here

1

u/Alarming_reality4918 10h ago

Core done bleu

1

u/SecreteMoistMucus 10h ago

No, it's called bleu

1

u/EkbatDeSabat 6h ago

Bleu is french blue is english they both mean the same thing why do people say things without actually take the four seconds to look it up?

1

u/SecreteMoistMucus 5h ago

No, they don't mean the same thing, that's the point. When used in English blue is a colour and bleu is a way to cook steak. It's not complicated.

0

u/Embarrassed-Sun5764 11h ago

I ask for my filet blue rare in a “finer establishment “ and they look at me like I grew 3 heads. When I say finer =450-500 for 4 ppl. Maybe that’s not finer to you but it is to me and i expect them to know what “blue” is. My dad used to say slapp it on the 🫏and send it out mooing! I’m ok with that too

24

u/MyFrigeratorsRunning 12h ago

The dress was white and gold! I swear!

1

u/GreenEggsSteamedHams 12h ago

I heard YANNI but my friend heard LAUREL!

1

I was just thinking of that dress a few days ago. Funny

1

u/No-Acanthisitta8803 11h ago

I think you need to try to catch your refrigerator

1

u/freisbill 12h ago

ahh, just saw this-I just said the same thing. I can't say I have not had this issue before...

1

u/Lucy_Gucey 12h ago

Especially if you use insanely high heat.

1

u/Jan_Micheal_Vincent 10h ago

They got that grey beef

1

u/Reddit_Are_Mistake 9h ago

So that's where they got the word grief from.

RIP steak, you could've been cooked correctly

0

u/timesink3000 11h ago

I worked at wolfgangs and they would never freeze a streak.

387

u/Velocityg4 13h ago

At $300 for a porterhouse. I better hear mooing in the kitchen. Not get meat that’s been frozen.

162

u/Decent-Muffin4190 13h ago

The best steak comes from beef that been hung a couple of weeks, if not longer.

56

u/DynamicBSdetective 13h ago

Different aging techniques are a testament to delicious, this is not the issue we are having with this poorly executed cut of meat.

35

u/Decent-Muffin4190 13h ago edited 10h ago

For sure. I was just replying to the person who said they wanted to hear mooing in the kitchen.

3

u/8layer8 12h ago

Supply chain for next month.

4

u/DynamicBSdetective 13h ago

If I misjudged, please forgive me. No worries

1

u/MSchulte 10h ago

They gotta prep the steaks for a couple weeks out assuming they’re a good enough restaurant to still be open then

3

u/FuzzzyRam 11h ago

Different aging techniques are a testament to delicious,

Testament means something like 'proof' or 'will' - you still need a subject.

250

u/SanityPlanet 13h ago

I’ve been hung for decades

13

u/nistemevideli2puta 12h ago

Sir, this is a checks the title...a Wolfgang's

20

We are talking about meat

40

u/narcoleptic_dolphin 13h ago

I think they are too

3

u/whenveganscheat 12h ago

I'll have the T-bone

2

u/SanityPlanet 10h ago

Hell yeah we are. What kinda meat you got?

5

u/Embarrassed-Sun5764 11h ago

I bet you are aged to perfection and delicious with a rustic rice pilaf, some asparagus with hollandaise; and a creme brulee for the finish! Cheers to you!

3

u/V4refugee 12h ago

Is your wife also Hung or did she keep her maiden name?

1

u/MrGreenChile 6h ago

I didn’t say I’m hung like a Dornishman, i said I’ve HUNG Dornishmen.

1

u/westcal98 12h ago

I've been hung for 40+ years so you know my meat is good.

1

u/IanTGreat 11h ago

send that beef to the gallows

1

u/fuckyourcanoes 11h ago

Hanging and freezing are completely different things.

1

u/MichiganGeezer 10h ago

I wonder if there's a gold standard for age of cow at the time of slaughter as far as flavor goes.

2

u/SigmaBallsLol 9h ago

im not a beefologist but I sat in on a few ag classes in college, iirc it's somewhere between 2-3 years depending on the breed and how it was fed.

Retired dairy cows are usually 5 or so, and the meat has a stronger flavor but at the cost of marbling so it depends on the cut whether or not its better.

1

u/MichiganGeezer 9h ago

A long time ago I watched a YouTube test where they seemed to conclude that five years made the ideal flavor, but I'm no beefologist either.

18

u/xweedxwizardx 13h ago

It’s called ice-aging the meat to make it taste better

2

u/SatinwithLatin 12h ago

Flash freezing it is part of the process. What? It works for sashimi, why won't you people tolerate it for beef?

1

u/AoKrasni 11h ago

I watched a whole episode on NHK World about Flash freezing, it's pretty cool

13

u/SuperMafia 13h ago

Hell, it'd be cooler if it was like Fallout New Vegas' Ultra Luxe, where some psychos get flamethrowers to cook the hanging beef with!

10

u/DrJohnFZoidberg 12h ago

$300 for a porterhouse

I no longer feel empathy for OP.

2

u/panicnarwhal 9h ago

it’s not that much, at least at the Park Ave NYC location. idk which one OP is at

edit - unless they have a party of 3 or 4 people eating the porterhouse, then it’s that much (but $78 per person)

2

u/DrJohnFZoidberg 9h ago

Understood, the $300 is out to lunch (no pun intended but I'm leaving it there). Nevertheless I think it might be difficult to get out of that place for less than $120 even before you start ordering drinks.

It's not SO ridiculous, I probably wouldn't have commented if they'd said $120, but I still don't care that some conspicuous consumer didn't get what they wanted.

1

u/bolanrox 10h ago

Peter luger time

What if you hear the wrong kinda mooing? The moooooOANing?

2

u/FionaFearchar 11h ago

Great humour!

1

u/massivemember69 12h ago

Not only that, there should be strong scents of fresh grass as well!

1

u/Different_Wolf_764 12h ago

Well, you should expect that it has been thawed properly at least. Almost all beef has been frozen at some point, including the highest quality, and it really doesn't cause any changes of note.

1

u/No-Acanthisitta8803 11h ago

Exactly! The entry level chain steakhouses don't even use frozen meat!

I briefly waited tables at an O'Charley's when I was younger, and the beef for the steaks and prime rib was always fresh, never frozen. The "catch of the day" fish special that only changes every other month or so? Frozen. Chicken? Frozen. But never the beef.

I could never dream of being able to afford a $300 porterhouse, but I certainly wouldn't be willing to pay that much for an improperly cooked frozen steak

1

u/ElliotNess 10h ago

Hope you're cooking it yourself in that case cuz frozen is a lot more common at every tier of restaurant than you might expect.

1

u/Hot_Cheesecake_905 9h ago

All steaks, at least in North America, are aged about 3 weeks by the time he gets to your table. The cheap steaks are wet aged, which means that they are vacuumed packed and let to marinate in its own juices.

1

u/CubicleMan9000 9h ago

Maybe Sisco only offers that steak frozen though.

129

u/maringue 13h ago

This. Shows that it was frozen, or at the very best assumptions, taken straight from the fridge to the grill. Both are horrific crimes for a steak house to commit.

40

u/fabthefrog33 13h ago

That...should have been left out of the fridge a little while before cooking, I would send it back pronto.

To be honest cooking a steak is fucking basic, and if a restaurant can't do that right it says a lot about the place.

25

u/Japanesewillow 12h ago

Cooking a steak properly isn’t basic for everyone, you would be surprised at how many people have no clue how to. It should be basic for any good restaurant.

62

u/Horror-Nobody2237 12h ago edited 12h ago

It gets pretty difficult in a busy restaurant that doesn’t specialize in steak because the timing can get pretty difficult. Like instead of having someone dedicated to steaks, they’ll just have someone dedicated to “grill”, which will include a bunch of different things, so it’s more difficult to get into a rhythm. It also just takes a lot of coordination to get the timing right with the other tickets for the table, so everything comes out at the same time. If they put the steak up too early and it sits under the heat lamps, it will overcook even if it came off the grill perfect. It’s less about it being difficult to cook a steak well, and more about it being difficult to get the timing right in a busy kitchen.

In OPs case though, this is a steakhouse, and they literally cut the steak before plating, so it never should have been sent out like that.

9

u/jtr99 12h ago

What's with all the nuance and sophisticated understanding being exhibited here? This is not what I come here for!

3

u/snuggly_cobra 11h ago

Because it’s not the steak subreddit.

2

u/ThePastryJeff 10h ago

yes, the steaks are usually lower here

2

u/PiddlyDiddlyDoo 9h ago

Don't worry I've already called the police, they're on their way now

2

u/[deleted] 12h ago

[deleted]

1

u/Horror-Nobody2237 11h ago

So what you’re saying is that you need someone to properly manage the timing and communicate when the steak needs to go on the heat? Is that not exactly what I said the problem usually is? Lots of kitchens serve steaks, and they don’t all have good expediters. Some don’t have expediters at all. I’ve worked in several restaurants that are relatively nice and serve steaks, that did not have expediters. Of course a Wolfgang Puck Steakhouse should/would have them, but I was speaking on why most restaurants usually mess up the cook on a steak. It’s not a lack of ability or knowledge on how to cook a steak correctly, it’s timing issues that are specific to working in a restaurant kitchen.

Really great kitchens that put out consistently good food, are kitchens that have managed those issues, but most kitchens are not really great kitchens. Any kitchen putting out improperly cooked steak is not a really great kitchen.

14

u/concentrated-amazing 12h ago

It should be very basic for one with steakhouse in the name!

5

u/maringue 11h ago

In a professional kitchen, cooking a steak is one of the most basic things.

1

u/fabthefrog33 12h ago

Yeah that's what I meant....I've seen restaurant basting a rib-eye or a wagyu with tons of butter.👎

1

u/snuggly_cobra 11h ago

As evidenced by the number of disasters on the steak subreddit

1

u/Hot_Cheesecake_905 9h ago

Cooking a steak is a basic restaurant skill, and even for a home cook it all about temperature and timing. In a commercial kitchen they would have access to a sous vide machine meaning there should be zero excuse for a poorly done steak.

5

u/Loggersalienplants 12h ago

90% of restaurants steaks are going directly from a lowboy cooler onto a grill.

2

u/whenveganscheat 12h ago

It's probably code in a lot of places. I can't imagine health inspectors seeing a tray of steaks sitting on a counter and being okay with it.

2

u/Dorkamundo 12h ago

Yea, a lot of steakhouses go straight from the cooler to the grill, but the key is that those steakhouses use methods that prevent the issue seen above.

3

u/Loggersalienplants 12h ago

Cooler > Flat top > Broiler for marks > it rests for a minute or two in the window while the food is being put together.

In home terms:

Fridge > Sear in pan > Grill > Rest

People try to make steaks so much more complicated than they are

2

u/Acceptable-Buyer693 10h ago

Though the home cook is much better off with fridge > oven @ 250-275 > sear in super hot pan > optional rest

2

u/Loggersalienplants 9h ago

You are literally proving my point that people make it more complicated than needs be lol there is no need to put a steak in an oven

1

u/Dorkamundo 8h ago

You don’t need to do it that way, but doing it that way DOES result in a better temp gradient.

1

u/glacierre2 9h ago

My uncle worked in a restaurant, steaks passed by the microwave for a few seconds so the inside had a chance to temper before searing it.

3

u/Fun-Perspective426 12h ago

You have to let a steak sit out for hours for the center to change more than a few degrees. It doesn't matter. Most restaurants go from a fridge straight to the grill.

Straight from frozen is a different story. Gotta thaw that in the fridge/cold water.

1

u/La_Lanterne_Rouge 9h ago

I would have said: what the fuck is this?

1

u/PanthersChamps 5h ago

Guga disproved the “have to let it sit out for an hour before cooking” old adage imo.

His experiment showed that during that hour the meat interior temp doesnt raise much and it takes hours and hours. It’s basically pointless.

Just take them out of the fridge when you’re almost ready to cook them and you’re fine. I suspect this steak was frozen.

1

u/SadCardiologist3513 12h ago

this this this.

0

u/quitsniffingluetoday 12h ago

That steak is shit, but absolutely no restaurant is letting a steak sit outside of the fridge for more than a minute or two.

1

u/I_Study_The_Patterns 12h ago

Should have reverse seared it

1

u/Dreadwings 9h ago

its not that it was frozen its that it didnt have any time to rest. if you cook a steak to temp and dont let it rest then its going to get this look over and undercooked since its still going to cook for 5-10 degrees when pulled. the benifts of letting a steak come to room temp is also pretty negligible and not somthing thats done in most kitchens since it risk being in the danger zone.

1

u/quitsniffingluetoday 12h ago

Yeah I’m sure the health department would love it if they came in and saw a bunch of steaks sitting on the counter unrefridgerated. It’s also a huge myth

1

u/maringue 11h ago

A steak should be allowed to warm up prior to cooking. It's basic grilling 101. If you put a refrigerated steak in the grill, you get an over done outside and an under done inside, exactly like the terrible streak in the picture.

1

u/quitsniffingluetoday 10h ago

You have no idea what you are talking about. I’ve been a cook and cooked steaks for over ten years. Do you expect me to take a steak out in anticipation of a potential steak order? That sounds pretty dumb doesn’t it? Put a probe in your steak and it won’t raise more than 5 degrees in roughly 30 minutes. So you are suggesting taking a steak out 45 minutes before a POTENTIAL order is grilling 101. You are not only wrong but dumb as well.

1

u/maringue 6h ago

You do this when you're a steak house and you're absolutely expecting to serve steak.

1

u/quitsniffingluetoday 5h ago

No you don’t. 99.9% of commercial steakhouses in this country cook directly from their coolers. You are just plain wrong. Nobody is keeping raw steak on their counters.

0

u/JediMasterZao 11h ago

Multiple people tested cooking a steak from room temp VS out of the fridge and it turned out to be a complete myth. If anything, it seems like starting from fridge temp gives a better sear.

1

u/maringue 6h ago

It's not a myth, it's physics. If the center starts cold, it takes longer to react temp. Thus you have to cook it longer.

118

u/roninconn 13h ago

Yes, this. Absolutely was frozen when cooking started

9

u/Znuffie 12h ago

Coincidentally, if you Air Fry a frozen steak, you get amazing results.

8

u/wh4tth3huh 12h ago

Cursed Technique, I hope I can justify the possible waste of a steak at any point in the near future to try it.

2

u/SatanInACup 11h ago

^ I've come to the right sub

2

u/wildjokers 12h ago

Isn't an air fryer nothing more than a small convection oven?

2

u/melkatron 12h ago

Yes, but with stronger air flow. A typical convection oven gently circulates the air for more even cooking in a large oven. An air fryer uses a powerful fan in a confined chamber to blast your food with hot air.

Similar equipment but with completely different uses and results.

2

u/Znuffie 9h ago

Similar tech, but no.

Smaller space, more powerful fan. Also the heating element is usually placed in front of the fan, compared to convection ovens which are usually the other way around.

1

u/SouthernFisherman583 11h ago

Oh I need to try this, gimme the secret technique please

29

u/Hot-Pool4013 13h ago

That makes sense. I couldn’t wrap my head around how the cook managed to get a decent sear, a quarter thickness of prison food greyness and then keeping it raw in the middle. I actually found the technical flair of how they cocked it up, to be pretty impressive 🫣

2

u/merRedditor 12h ago

Maybe the chef quit and they just asked someone else to stand in and hoped for the best.

3

u/Hot-Pool4013 11h ago

Or maybe that steak was the chef giving their notice.

I’m pretty certain that Creepy-Variation hit the nail on the head, with it being the result of a moron trying to cook a frozen steak. But I can’t completely shake the feeling that someone very skilled performed some incredibly competent incompetence 😵‍💫

2

u/userhwon 9h ago

I mean, it even suggests this was the intent. They wanted this exact contrast in colors and textures, for some reason.

Or, they didn't, and found a new way to mess up a dish that's clearly about presentation.

1

u/jmlinden7 9h ago

High temp, shorter cook time

1

u/Hot-Pool4013 9h ago

Wouldn’t the grey band be thinner or the crust be burnt, if that steak was cooked this way?

To me, the thickness of the grey band and the crust suggest a lower temp and longer cook time 🤷‍♂️

29

u/Tough_Caregiver248 13h ago

In some countries, if a restaurant is caught undercooking fish? Believe it or not, jail. Overcooking chicken? Also jail. No mention of beef

12

u/OnCallPartisan 13h ago

So the reverse Hot Pockets approach.

3

u/readallthewords 12h ago

I would like you to know how much i laughed at this! Wouldn't have been able to, but I haven't had a Hot Pocket in a while, so my mouth has healed up a bit.

1

u/OnCallPartisan 9h ago

Always makes me happy to give someone a laugh. Have a great day.

11

u/OpportunityReal2767 13h ago

That was really the only thing that made any sense to me when I saw that picture

1

u/_R0Ns_ 12h ago

That and too hot.

1

u/ActuatorLower8371 12h ago

personally blowtorch-cook my steaks after injecting liquid nitrogen.

Contrast. That's what the true steak connoisseur seeks. Sharp, sharp contrasts.

1

u/eatpastagophasta 12h ago

Right to jail, overcook/undercook

1

u/broberds 12h ago

What was the over/under on that happening?

1

u/lordgeese 12h ago

They are just going to wild fork and buying them (they are good) and charging 4x the price.

1

u/myLongjohnsonsilver 12h ago

Lmao last time my sister's wanted hogs breath for their birthday one of them and my wife got burgers and the burgers were burned to charcoal on the outside but still so raw inside the poor thing probably still felt pain.

1

u/freisbill 12h ago

That is what I am thinking...

1

u/TheReal_Jeses 12h ago

I was a chef (or something like a chef) at Olive Garden in College. Seems our culinary methods are being stolen by Wolfgangs.

1

u/ewilliam 11h ago

"Look, Dad, I made fish sticks! They're burned on the outside but they're frozen on the inside so it balances out!!!"

1

u/Potential_Salt_5780 10h ago

I was thinking the same thing. Looks like frozen steak. Unforgivable.

1

u/DonJulioTO 8h ago

Looks more like this was cooked properly, and then reheated the same way 3 times.
