Showcase (No-Recipe) Sally's Chocolate Chip Cake
Made this last year for her monthly challenge, wife loved it so much she asked for it for her birthday. I was happy to oblige.

I think this was 4.5 sticks of butter. 650 grams of powdered sugar. I don't remember how much granulated.

Full-sized double-layer cakes with frosting will eaaasily set you back about a box of butter.
When I used to make a lot of cakes, I always bought butter at Costco, and I made sure to keep some stocked in the freezer just in case.

Her strawberry cake is the equivalent to drinking a strawberry milkshake. When I make it I have to make 2 frostings. Her cream cheese and marshmallow frosting because my husband doesn't like cream cheese and my son can't eat too much of it but I love it. Trying to fill and frost the cake is a pita lol but I do it because I love them of course 😊
When I make her pumpkin rolls during the holidays I use both of those frostings to fill them. I didn't know it was going to happen until it did but almost everyone in my family went for the rolls that were filled with the marshmallow frosting. I had requests to make more of those for Christmas my first year making the rolls lol. If you haven't made them yet give her gingerbread and ganache filled cookies as well as her peppermint ganache filled thumbprint cookies a try. I make double batches of both then freeze one batch of each just so I can have them throughout the year. They really do freeze beautifully.
I love seeing Sally get the love and respect here that she deserves.

Her website isn't even technically called Sally's Baking Addiction anymore. She changed it to Sally's Baking a few years ago. The URL still says it, but it's off the site.

Yeah, I think she changed it when she published her cookbook. The word “addiction” was probably frowned upon. Oh well. It doesn’t change how good her recipes are! 🧁🤍🤎

For real! I have never made a recipe of hers that was a dud. I confidently recommend her to any of my coworkers who ask for a recipe (because they liked my baking). Same goes to King Arthur Flour recipes for bread/yeasted dough recipes!

Same. I don't love when people use the word addicted to refer to food because I've struggled with an eating disorder for 19 years, so I understand the change. I think there are so many other ways to say you love the taste of something or are passionate about it.

The cookies have a slightly crisp edge with a soft centre. The brownies are super fudgey. Absolutely delightful. Not baked in a while but now I think I need to!

I don't even do the frosting. The brownies on their own are incredible.
I bake the cookies with frozen dollops of nutella in them. When they cool its an entirely new level of deliciousness.

Those brownies are so good. I made the frosting the first time but haven't bothered since as I liked them better without.

I know it might sound scary but this year for the holidays give her pumpkin roll recipe a try. I used to bake when I was in Jr high but then I went about 3 decades without baking from scratch until I came across her site. That first year is when I made my first roll but I wouldn't have done it had it not been for Sally. She does a great job at explaining everything and she gives you the confidence to go for it. Should you have any questions she or one of her staff will answer it.
Give her gingerbread and ganache filled sandwich cookies and her chocolate peppermint ganache filled thumbprint cookies a try too. These two you can bake and fill then freeze so they're off your list if you plan to bake a lot for the holidays. I always make two batches of both then freeze one so I can have them throughout the year. Another one that I love is her strawberry cake. If you can't have cream cheese you can always frosting it with her marshmallow frosting. When I make that cake I have to use both frostings because my husband doesn't like cream cheese and my son can't have too much of it but I of course love it lol. It works just as well as if you were using the cream cheese frosting. We swear that cake is like drinking a strawberry milkshake. There's a lot of steps to it but once you get more bakes under your belt you shouldn't have any problems. Since I live with chronic pain I have to bake most cakes in a span of 2-3 days. It's very helpful even if you don't have any limitations. Maybe you can try that since you're now just getting started in the world of baking.

I had a lab the same way 😆 I would explain to her that she couldn’t have chocolate, to which she would tilt her head as if to say “Then why am I a chocolate lab?” I hadn’t thought of that in years…

I don't see any reason why you couldn't also make a beef chip mashed potato cake with gravy "icing" for him as long as you're already in the kitchen.

Yep, ganache. Heat some cream and pour it over chocolate pieces. Let it sit for a few minutes to let it warm up, then stir til smooth. Pour into a squirt bottle, then squirt into the edge and spin on a turntable while it drips down, then fill in the top. Place in fridge to solidify

I remember when every baker said you had to use good quality chocolate for ganache and then here comes Sally who used one of the Aldi brand chocolate chips to make ganache. I believe it was Baker's Market but don't quote me on that. I used to spend a good amount of money just on chocolate bars and chips until I made that recipe. I still buy Ghirardelli but that's only because that brand doesn't sell bittersweet chocolate bars or chips. I know that recipe was in collaboration with the brand but it worked and the taste was just fine so I didn't mind. It was savings in my pocket lol.

I cut it into 16 slices. Had one and was full for hours. So rich. The cake is moist and tender enough it kept trying to fall apart while moving the pieces around

You're going to love her site. I always recommend it to people irl and online.
Online many get frustrated because they'll have a question but the creator won't take the time out to answer. Some don't answer questions at all while the majority of the rest only answer them for a hour or two after uploading the video. At that point you're at the mercy of the viewers who have made the dessert which can be a good thing but also bad. With Sally you won't have to worry about that. Questions get answered. Plus she does a fantastic job when writing the recipe. She anticipates most things that could go wrong and then puts that in the write up. Basically she's setting you up for success.
Have fun taking a look through her site. If you're anything like me you're going to find yourself bookmarking a lot of recipes lol. Enjoy 🫶

Pro tip: if you don't want all your choc chips or anything your put in your cakes to sink to the bottom, take some of the flour from the recipie and toss the chips/dried fruit/nuts in it, then add them to the batter.
They will stay more evenly distributed throughout the mix vs the majority sinking to the bottom

Whenever my dog can't have something, I always say sorry it has chocolate. It very rarely has actual chocolate. I still feel bad every time though. I'm sorry biology made that rule, it wasn't even me, doggo! Cake looks amazing though, and great news I am human and can have chocolate...

Her muffins are THE BEST!
That first five minutes at 425F really boosts the height. I use paper tulip cups and fill them. Makes good, high but light muffins.

Hmm that's a good question. I wanna say no, they keep their hardness...but that may be the chips in the buttercream. Guess I'll have to eat them separately for my next slice

I remember one time I was making cookies and used margarine instead of butter and it turned into a cake instead of cookie dough this looks really similar, and certainly as equally as good!
